SOAVE, OLIVES AND VINES

An afternoon in the countryside. Does the idea of eating homemade bread toasted over an open fire and slathered with olive oil from a local frantoio (olive oil mill) sound more appealing than visiting another museum? Does sipping a glass of fine wine and gazing out at the vineyards of the Veneto sound more inspiring than contemplating Roman debris? If so, let us whisk you off into the hills by private car and driver. Our first stop is the estate of a Frantoio in Val di Illasi. Val di Illasi is the land of the Grignano variety, the real native olive with which the extra virgin olive oil Veneto Valpolicella DOP is produced, a fruity oil that excites us for its clean sense of smell and the richness of its antioxidant and beneficial substances. Here, you will tour the premises with the owner of the mill, and learn everything there is to know about cold-pressed olive oil, from harvesting to bottling. Following a pleasant drive amidst castles, villas and farms, we reach the vineyards. Here, we tour the grounds, hear about the winemaking traditions of the Soave zone and sample several local wines with our wine expert.
